Cider Cake

In a previous life (BC! ) I spent a very pleasant afternoon in the kitchens at Barrington Court NT (just over the hill) working with the bee keeper bottling honey and chatting with the Head Cook, Jenny Yeadon. And she divulged her secret Somerset Cider Apple Cake recipe.... So, as an autumn special, I'll very happily have one ready for your arrival if you would like to experience this delicious local specialty - just let me know. Now.... what shall I do with the left over cider.......
